Safer Food, Better Business
Food hygiene legislation requires caterers to have a documented food safety management system
If you are a small caterer serving food to members of the public on a regular basis, the Food Standards Agency (FSA) has developed a free, easy to use system for you called Safer Food, Better Business (SFBB).
For a guide to using the Safer Food, Better Business system and to download a new pack or a diary refill pack, go to the Food Standards Agency’s website.
Each SFBB pack is split into five sections containing a number of fact sheets called ‘safe methods’. Typical safe methods include instructions on cooking food safely and reheating. Decide which safe methods apply to your business and follow them. There are about twenty safe methods in total but not all of them apply to all businesses.
The diary provided in the pack will help you to keep your records. It also includes a four-weekly review to ensure that the document remains up-to-date and to help you to identify and address any common problems.
Specialist catering businesses
SFBB has been adapted for specialist small catering businesses and the following are available:
A video guide is available in 16 different languages to help you use your pack and train your staff. The guide is divided into separate sections for staff and managers and each section takes about 15 minutes to watch.
